F4F: Red Curry Mahi Mahi Salad

If you enjoy spicy fish dishes, you should run right out and get the ingredients for this dish! The new Food Network Magazine presents this recipe as one of several seafood items, and it’s truly delicious! And good for you too.
My attempt to improve on this scrumptious dish:
Mahi mahi is my favorite fish, with or without a hyphen. And generally speaking, I don’t care for fish. This dish is a zesty exception to that rule!
You can dress this thing up however you like, of course. Add some lemongrass, daikon or bamboo shoots for crunch and texture; put some Thai basil in with the cilantro; or put in some noodles, the universal Thai “meal stretcher.”
You can use most any mild, white-flesh fish for this meal, but there’s nothing that’s quite like mahi mahi; unless you’re on a budget, of course…
