Pineapple Pork Chops

Fresh, Ripe PineappleOur family loves pork, especially chops. I’m always on the lookout for new recipes and flavor combos to make pork “interesting.” Okay, interesting isn’t the tiebreaker; they’ll eat chops almost any way you can fix them, and they have some old favorites that never lose their interest.

Still, there’s nothing wrong with having a couple hundred pork chop recipes, is there? Well, IS THERE??

I keep telling myself, just one more recipe, then I’ll call the collection complete. Recently I was thinking about exactly this issue while Bobby Flay was grilling up some short ribs on his show, “Grill It!” Because it involved fire, and large tools, and cooking (not to mention a pretty girl or two), I was mesmerized. I soon forgot all about my problem the recipe question and started taking notes.

To make a short story long, he grilled up some pineapple rings (no mystery there) and some lovely pork ribs, then chopped up the ribs and plated everything with the usual Flay style. It looked so good I was almost licking my wife’s new flat-panel plasma TV to keep the pineapple juice off my carpet.

The secret wasn’t the grilling, though. It was the sauce. Lots of flavor, with a good little bit of sweet heat. I was also impressed with how quickly it all came together! And no leftovers. Again. Oh well.
