
I was in the grocery yesterday and for some reason I looked in the fresh meats section. There wasn’t anything on the shopping list I needed from there; I really wasn’t even supposed to be in that part of the store. Follow your instincts, though, I always say! I looked up and there were some beautiful links of fresh, hot Italian sausage. And some sweet Italian and mild Italian too, but I only had eyes for the Good Stuff.
I bought some and smiled all the way home. I knew I now had the Perfect Antidote to Monday Blues in the fridge:

This dish uses a really fresh tomato sauce; as in, the tomatoes are uncooked. If you don’t like the texture of such a rustic sauce, then substitute in your favorite tomato-based pasta sauce. The real key here is the Italian sausage and the zesty oil and spices. Using authentic Parmigiano-Reggiano cheese makes a big difference too! That stuff from the shaker bottles just doesn’t cut it…
