
October is Cajun & Creole Cuisine Month (CCC, or C-cubed to those in the know, like the Underground’s educated audience). Why is that? Well, because we here at the Chile Underground say so, that’s why. That, and I got a really nice new Cajun cookbook, and all I had to do was cat-sit for a friend. (Well, that and maybe a few other things.)
Louisiana residents don’t get Real Crazy except in February, around Mardi Gras. I suppose you could then call February Cajun Month. Since it’s really October (almost), we can’t use Cajun Month. And International Creole Month has been celebrated each October on Saint Lucia for years. (Maybe they’ll invite me for a set of lectures? I can dream, can’t I?) So, in true CU style, we’re stealing from both groups melding the concepts into something entirely new! Done as only the Elves at the Underground can do, of course. (Of course.)
What book? Why, thank you for asking. I could tell you, but then you’d run right out and get your own copy, and you wouldn’t need me anymore visit so often. Oh, all right; I’ll go all soft in the head, just for you. The book is The Louisiana Proud Collection of Home Cooking. It’s nice and thick, with plenty of tasty-looking recipes. And from all over Louisiana, with beautiful line drawings of distinctive architecture found all around the state. I’ll be spending quite a bit of time reading and trying the spicy recipes in this one.
So check back often for jambalaya, dirty rice, gumbos and more over the coming weeks! Who knows, you may just learn to say a few words in French…
