Okay, I didn’t want to start out too boldly here. I’m kind of a “rush into things slowly” sort of guy at times. So I chose an easy recipe; one you can hit over the fence on the first swing, with your eyes closed. And it’s not that spicy, unless you want to make it so…

If you’ve ever had the Potato Skins at TGI Friday’s and enjoyed them, you’re going to love these. You can add bacon and cheese if you want, but be careful of too many other flavors or the curry and chiles won’t come through. Okay, the chiles will, and if you pump up the curry powder amount you can For Sure taste (and smell) the Indian goodness. If garam masala is too zesty for you, try a milder curry powder.

This dish makes a great side for a Christmas dinner. Trust me! Would the Chile Underground lead you astray? You don’t need to answer that…
