According to Alton Brown, this old-timey dish got its name because of the noise the mixture makes as it cooks. Steam builds up in pockets in the dough, and then undergoes a wet-sounding, bass-register release that sounds like a small weightlifter trying to pick up a delivery van. If the heat is set just right, this item will happily burble along as it cooks.
