It’s Soup Weather! What’s Your Favorite?

Cold; oh so cold! How cold is it?

  • It’s so cold that stainless flatware is sticking to tongues.
  • Hitchhikers are holding pictures of thumbs.
  • My optician is giving away free ice scrapers with every new pair of glasses.
  • Starbucks is starting a new product line: Coffee on a stick.
  • We’re taking everything out of the freezer and moving in there, to keep warm.
  • We don’t clean house anymore; we just defrost.
  • The Boy Scouts are offering de-icing services rather than helping little old ladies across the road.
  • I chipped a tooth on my soup.

Which brings up an important observation: This is GREAT soup weather! I made a big ol’ pot of beef vegetable soup last evening, using some stock I’d prepared and frozen, and a rump roast out of the freezer too.  Cut the roast into small, bite-sized pieces, fry it a bit to add some color (and speed the cooking), then put that into the soup pot with the stock. Once it’s boiling, add the other stuff: diced onion and celery, sautéed for a couple of minutes in the fry pan the beef was cooked in; carrots; frozen and canned veggies of all sorts, including baby limas, corn, tomatoes, green beans and more. Bring to a simmer and let it go for a bit, then serve! Once we’ve eaten this pot down a ways I’ll add some cooked barley to turn it into a never-ending soup. Heck, we may make it all the way to Christmas on this one.

Next up: Some chicken tortilla soup. A great choice because it’s easy to fix, and with so many garnish choices (chips, cheese, avocado, cilantro, sliced green onion, red onion, corn on the cob) everybody can have just the soup they want.
