I’ve been home from India for a few weeks now, and although I’ve cooked some nice curries since, I don’t have the time (or the appetite) to make several entrées and all the trimmings for a simple lunch.

Home beckons, and my bags are packed. I’ll miss India, this land of mystery, so full of contrasts and surprises. Immense cultural wealth in such crushing poverty. An overriding drive to be better, with so many barriers to improvement. So many spices and flavors in their food, and so little food to share.

There are so many good things to eat in India that I’m glad my hotel serves several buffets each day. I made it fine into Bengaluru, although it was 2 AM before I got to the hotel and got settled. A few hours of refreshing sleep and I was ready to go!
